Fish oils are especially high in the omega-3 fatty acids eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) which are precursors to eicosanoids. Eicosanoids are known to induce chemical changes in the body that produce an anti-inflammatory effect. Omega 3 is classed as an essential fatty acid because the body cannot produce it, nor can it convert omega-6 fatty acids, which are plentiful in the Western diet, into omega-3 fatty acids. The diet of our ancestors was less dense in calories, being higher in fiber, rich in fruits, vegetables, lean meat, and fish. As a result, the diet was lower in total fat and saturated fat, but contained equal amounts of omega-6 and omega-3 essential fatty acids. Today this ratio is approximately 10:1 to 20:1, western diets are deficient in omega-3 fatty acids compared with the diet on which humans evolved and their genetic patterns were established.
